Baked Greek-Style Beans (and some Dolma)

I had a strong craving for dolma after visiting a nice little Greek cafe for lunch while I was in Melbourne. I tried making my own, following a random recipe online. They had included the prep time, but cheekily didn't mention that they had their own 'dolma-making machine', where you simply lay the leaf out, put some stuffing in, and then push a lever to wrap it all up! It took nearly an hour to get good at doing it by hand, and I highly recommend you watch a Youtube video first :) They turned out ok, but the rice wasn't thoroughly cooked, so I will try again another time.

What was a success, was the massive tray of baked Greek beans. I was pretty lazy and used tins instead of boiling the beans from scratch, but it really didn't matter. They were gorgeous, a sweet and umame counterpoint to the lemony dolmas, and incredibly filling.

Ingredients:

  • Two medium white onions or one large
  • Two tins of chopped tomatoes
  • 4-6 cloves of garlic
  • a small tin or 4 tbsp tomato puree
  • Three tins of butter beans
  • 1 tsp sugar
  • 1 tsp dried oregano
  • pinch of ground cinnamon
  • a small handful of parsley

Preheat the oven to 180 C. Finely chop the onion and gently fry in olive oil until translucent - about 6-7 minutes. Crush in the garlic and fry for a further two minutes. Finely chop the parsley and add, along with all of the other ingredients; season well and stir to combine. Tip into a deep baking dish and bake for an hour; the sauce will thicken and the beans will absorb the flavours.

BBQ Aubergines and Double Bean Salad

At last, a meal this week that I put together and actually feel happy about. As I previously covered, aubergines work great on the barbie; this time I spiced them up a little with some ground black pepper, Chinese five-spice and ground coriander. While the aubergine slices and a couple of sweetcorn slowly toasted over the BBQ, I put together a tasty little salad.

Ingredients:

  • 250g green beans, tailed
  • two ripe red tomatoes
  • a small bunch of basil
  • a tin of butter beans
  • 2 tbsp capers
  • juice of half a lemon
  • 1/2 tsp sugar
  • 1/2 tsp salt
  • 2 tbsp olive oil

Steam the green beans for five minutes, until just cooked. Drain and rinse briefly; they will continue cooking while they're hot, so if they're in danger of going soggy, blanch them in ice cold water. Cut the tomatoes into small cubes and tear the basil into pieces. Drain the tin of beans and combine with the vegetables and capers in a large salad bowl. Whisk the lemon juice, sugar, salt and olive oil together in a jar or bowl then pour over the salad. Toss and serve immediately.

Mackerel with Butter Beans and Chorizo

Had a super-busy day cycling around Perth buying yet more things for the house. We needed something a bit more protein-rich than usual and this really fit the bill! Vaguely Spanish in inspiration but really, just something I threw together because I felt like all the flavours involved. Worked out really well!

Ingredients:

  • 2 mackerel steaks
  • a small bunch of coriander, finely chopped
  • juice of half a lime
  • half an inch of fresh red chilli, finely chopped
  • one red pepper
  • one green pepper
  • one small white onion
  • a small chorizo sausage
  • a 340g tin of butter beans
  • cooked brown rice, to serve

Set your brown rice cooking. Pop the steaks in a glass bowl and mix in the coriander, lime juice and red chilli; leave to marinade while you prepare the rest. Halve the peppers, brush lightly with olive oil and place underneath a hot grill for 15-20 minutes, until at least half of their skin has blackened. Drop into a bowl and cover with a plate, allowing them to steam in their own juices.

Finely slice the white onion into rings and the sausage into rounds. Fry together over a moderate-low heat for ten minutes, until the onion is golden and falling apart, and the sausage has taken on tinges of golden colour. Tip in the butter beans, turn off the heat, and stir together to warm through. Grill the mackerel 2-3 minutes each side, until cooked. Meanwhile, peel the skins from the peppers and tear into rough strips, adding to the butter bean mix. Serve!
